This is a classic aged cheese that is a fine addition to any cheese plate, Aged Bloomsday can take the place of cheddar or aged Manchego. Aged Bloomsday melts beautifully on top a burger or in grilled cheese, and it makes a perfect partner for an oaky chardonnay or a full-flavored Petit Sirah.
